Kafuli

This is what happens when Spinach leaves meet Fenugreek leaves and bond over aromatic spices in the closed confines of a pan, enclosed in a rich gravy of rice paste and curd. It teams up best with steamed rice or rotis with a generous lashing of desi ghee.

Thechwani

Think of the humble potatoes and radish root sacrificing themselves in a mortar and pestle, uncut, unpeeled, to emerge as a beautiful dish called Thechwani. These crushed veggies are then simmered in a light as air gravy of onions and tomatoes, tempered with unique spices to be served with steamed rice. No wonder we have a crush on it.

Chainsoo

Roasted, toasted and ground black gram seeds (Kali urad whole) meld with oil and traditional spices to produce this thick, healthy, warming, stew-like dish. Garnished with fresh coriander leaves and pure ghee, it’s what hungry tummies call out for in the cold weather.
